Here is the recipe for an easy to make meal I call "Playa con Gente" (pronounced ‘ply-a con hen-tay’ and means "Beach with people").
---Serves 2 (for 4 people, double the mixture) Ingredients: ½ a red pepper (not the hot ones) - also known as red paprika ½ a green pepper (not the hot ones) - also known as red paprika ½ an Onion ½ a Zucchini About 12 medium size mushrooms 1 carrot 250grams whole meal pasta 2 table spoons cholesterol free (and omega rich if possible) margarine 100mls milk Table spoon olive oil Pinch of salt Pepper 1 heaped tablespoon vegetable soup powder. (more if it’s a weak powder) 2 large slices of a medium cheese. (about 50gms) Method Fill a pot with the pasta and cover generously with water. Bring to the boil (stirring occasionally to make sure the pasta doesn’t stick together) and add a pinch of salt. Chop the carrot and add to pasta. Leave simmering to cook pasta and carrot together.
In a medium sauce pot put the milk and margarine. Put on a hotplate about ¾ heat. Add the onion, peppers and zucchini. When the milk starts to boil, turn the heat to low and add the vegetable soup powder and a little pepper. Chop the cheese and add. Remove from heat and stir until smooth and creamy. Add a little flour to thicken it. If it needs a bit more zing, add a little more vegetable soup mix to it. Fry the sliced mushrooms in the olive oil on a high heat until golden brown. Drain and wash the pasta/carrot and mix in the sauce mix. Serve with the mushrooms on the side of the plate. Enjoy!
